Whoopie pies
These whoopie pies are luscious, light and seriously chocolatey.

Ingredients
• 1 cup (150g) plain flour
• 1/2 cup (50g) Dutch cocoa
• 1/2 tsp baking powder
• 1 1/2 tsp bicarbonate soda
• 120g unsalted butter, softened
• 1/2 firmly packed cup (100g) brown sugar
• 1 egg, at room temperature
• 1 tsp vanilla extract
• 1/2 cup (125ml) buttermilk
• 100g white marshmallows
Method
1. Preheat the oven to 180°C. Line 2-3 baking trays with baking paper.
2. Sift the flour, cocoa, baking powder and bicarbonate of soda into a bowl.
3. Beat the butter and sugar in an electric mixer on high speed until light and fluffy. Beat in the egg, followed by the vanilla and buttermilk. Reduce speed to low, add dry ingredients and beat until combined. Place 32 tablespoonfuls of mixture 4cm apart on the prepared trays. Bake for 7-8 minutes until doubled in size and firm on top when gently pressed. Cool on trays.
4. Place marshmallows and 1 teaspoon warm water in a microwave-safe dish and microwave on high for 20 seconds, then stir until smooth. Spread the melted marshmallows over 16 of the rounds, then sandwich them together with the remaining rounds.

Curried chicken, lentils and rice

Keep dinner fast, interesting and tasty with these bulk-buy items.
Ingredients (serves 4)
• 1 tablespoon vegetable oil
• 1.5kg mixed chicken pieces, trimmed
• 1 brown onion, finely chopped
• 1/4 cup korma curry paste
• 1 1/4 cups basmati rice, rinsed
• 2 cups boiling water
• 2 teaspoons chicken stock powder
• 1 cup frozen peas
• 400g can lentils, drained, rinsed cup slivered almonds, toasted
• 1/4 cup chopped fresh flat-leaf parsley leaves

Method
1. Preheat oven to 200ºC/180ºC fan-forced.
2. Heat oil in a large, flameproof baking dish over medium-high heat. Cook chicken in batches, turning, for 5 minutes or until browned. Remove from dish. Add onion to dish. Cook, stirring, for 3 minutes or until softened. Add curry paste and rice. Stir to coat.
3. Return chicken to dish. Combine boiling water and stock powder in a jug. Add to dish. Stir to combine. Cover dish tightly with foil. Bake for 20 minutes or until chicken is cooked through. Add peas, lentils and 1/4 cup cold water, if needed. Bake for 5 minutes or until rice is tender. Stir in almonds and parsley. Serve.
Notes
• Timesaver shortcut: Canned and frozen vegetables reduce cooking time.
About this recipe: We used a combination of chicken drumsticks, wings and chicken thigh cutlets with the skin on. They’re available from the supermarket deli or the fresh meat and poultry section.

Roast vegetable salad

Ingredients (serves 4)
• 1 small kumara (orange sweet potato), chopped
• 160g pumpkin, chopped
• 2 small desiree potatoes, peeled and chopped
• 1 medium carrot, peeled and sliced
• 2 small onions, sliced
• 2 cloves garlic, crushed
• 1 tablespoon chopped fresh rosemary
• 1 tablespoon olive oil
• 420g can Edgell Four Bean Mix, drained
• 1 tablespoon balsamic vinegar
• rosemary, to garnish
• crusty toasted bread, to serve

Method
1. Preheat oven to 200°C. Line a large baking tray with non-stick baking paper.
2. Combine kumara, pumpkin, potatoes, carrot, onions, garlic, rosemary and oil in a large bowl. Mix until vegetables are evenly coated with oil. Season with salt and pepper.
3. Place vegetables in a single layer in a large baking dish. Roast for 35 minutes.
4. Place vegetables into a large bowl and stir in beans and vinegar. Garnish with rosemary. Serve with toasted bread.
